Chocolate Chip Banana Bread
Simply the best. The best for Sunday morning breakfast, the best for a mid-day work snack, and the best for dessert.
Dress it up or keep it simple. This recipe is forgiving so you can make it your own for any occasion. Brown sugar crisps the crust and feel free to add more butter (not too much) if you like a denser loaf. Throw in some walnuts, but never omit the chocolate chips!
INGREDIENTS
1 2/3 cups white sugar
1/3 cup brown sugar
3/4 cup butter
6 bananas (3 cups mashed)
4 eggs
2 1/2 cups flour
2 tsp baking soda
1 tsp salt
1 tsp vanilla
1 cup chocolate chips (mini semi-sweet)
Set oven to 350F, line 2 loaf pans with parchment paper.
Cream butter and sugar until smooth. In a separate bowl, cream bananas until smooth. I like to use frozen and thawed bananas for extra banana flavour. Mix in dry ingredients with a spatula until just combined.
Stir in chocolate chips (donโt measure, use your judgment, then add a few more)
Bake for 45 -60 mins, until tops are golden and it passes the toothpick test (insert toothpick or knife, it is done if it comes out clean).
