Chocolate Donuts with Cream Cheese Icing

Donuts + Mini Eggs + Cream Cheese = can’t go wrong

These come together in 30 minutes and are sure to please everyone at your Easter brunch

INGREDIENTS

1 cup sugar
1  egg
2 tbsp melted butter
1 tsp vanilla
1 cup buttermilk (or milk + 1 tbsp white vinegar)
2 cup flour
1/2 cup cocoa
1 tsp baking soda
1/4 tsp salt

Cream Cheese Icing

1/2 cup cream cheese, softened
1/4 cup melted butter
1 tsp vanilla extract
2/3 to 1 cup icing sugar
1/3 cup cocoa (optional)
1/2 cup shaved coconut

Preheat oven to 350 degrees Fahrenheit. Spray a donut pan well with non-stick cooking spray or rub with oil on a paper towel.

Mix melted butter, sugar, and vanilla until smooth, then add buttermilk and eggs.

Add dry ingredients to wet, until just combined.

Spoon the batter into the donut cavities making sure to only fill them about 1/2 full (they will rise).

Bake for 8 mins (10 max) or until a toothpick inserted into the donut comes out clean.

Remove from the oven and allow to cool for about 5 minutes in the pan. Remove donuts from the pan and transfer to a wire rack to cool. While on the rack and still warm, dip donuts in prepared cream cheese frosting.

In a separate bowl, mix together the softened cream cheese, butter and vanilla until smooth. Add icing sugar until consistency of the icing is liquid enough for dipping, but won’t drip off the warm donuts. Sprinkle with unsweetened or sweetened coconut, and fill middle with mini eggs. Alternatively, add 1/3 cup cocoa powder to the icing, and decorate with sprinkles for a more classic or birthday cake style donut.
