Apple Cake with Pecan Crumble
All your favourite flavours of warm apple pie
…with a nutty crunch, this versatile cake is an all-day kind of treat best served with coffee for breakfast, tea at lunch, or ice cream for dessert.
INGREDIENTS
3 eggs
2 cups sugar
1/2 cup melted butter
1/2 cup vegetable oil
1 tsp vanilla extract
2 cups flour
2 tbsp ground cinnamon
1/2 tsp nutmeg
1 tsp baking sods
1 tsp baking powder
1/2 teaspoon salt
4 cups peeled and finely chopped Granny Smith (for tartness) or Macintosh (for sweetness) apples
1 cup chopped pecans (optional)
Pecan topping
3/4 cup flour
3/4 cup brown sugar
1 cup chopped pecans
1/2 tsp cinnamon (or more)
1/4 tsp salt
1/2 cup melted butter
Heat oven to 350 degrees and line a 9x13-inch baking pan with parchment paper.
In a large mixing bowl, whisk eggs, butter, oil and sugar. Once combined, beat lightly until frothy.
Stir in vanilla, spices, salt, baking powder and soda, then stir in flour, 1 cup at a time until just mixed.
Pour 2/3 of the batter into pan, layer the apple slices on the batter, then pour remaining batter on top.
Mix all topping ingredients together in a bowl, then sprinkle on the cake.
Bake for 45 minutes or until toothpick comes out clean.
